Roasted Sweet Potatoes
/Add some sweetness to your plate with this popular, crowd-pleasing side dish. It's one of my personal favorite recipes and might become one of yours too! Make a bigger batch so you have leftovers (these taste great the next day, hot or cold!)
Roasted Sweet Potatoes
Yields: 2 servings
INGREDIENTS
1 sweet potato (feel free to leave the skin on if organic, otherwise peel it)
Coconut oil (melted)
Dash Sea salt and pepper
Ground Cinnamon (optional)
DIRECTIONS
Pre-heat oven to 400 degrees
Cut sweet potato into medium-sized pieces (make them as close to the same size as possible to ensure even cooking)
Combine all ingredients in a medium bowl and mix well until sweet potato is fully coated with oil and spices
Spread sweet potatoes onto a baking sheet or baking dish in a single layer
Bake for 30-40 minutes or until tender
Serve and enjoy!
