Zucchini Hummus
/Zucchini Hummus
INGREDIENTS
- 2 cups zucchini (chopped)
- 1/3 cup lemon juice (juice from 1-2 lemons)
- 1/4-1/3 cup tahini
- 1/4 cup olive oil
- 1 clove garlic (peeled, minced)
Spice measurements are approximate...start with the amounts below and add more to taste (I used A LOT of cumin and paprika to kick it up a notch):
- 1 tsp celtic sea salt
- 1 tsp cumin powder
- 1 tsp curry powder
- 1 tsp paprika
- Dash cayenne pepper
DIRECTIONS
Blend all ingredients (except tahini) in food processor. Add tahini to food processer and blend until smooth and creamy.
SERVING SUGGESTIONS
- Wrap in collard leaves to make hummus wraps
- Serve with raw veggies (i.e. carrots, cucumbers, celery, red bell peppers, broccoli)
- Serve with pita bread, wraps or crackers
