Oatmeal Pancakes (or Waffles)

Oatmeal Pancakes (or Waffles)

  • Prep Time: 10 minutes
  • Cooking Time: 10-20 minutes
  • Yields: 2 servings (approx 10 pancakes total)

INGREDIENTS

  • 2 cups rolled oats
  • 2 cups water
  • 1 banana
  • 2 tablespoons maple syrup
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons oil (I like coconut oil)

DIRECTIONS

  1. Place all ingredients, except oil, in a blender and blend until smooth.
  2. Let stand a few minutes until batter thickens.
  3. If batter is too thick to pour easily, add some water.
  4. Heat oil in frying pan or skillet.
  5. Pour batter, by ¼ – ½ cup, into pan and cook for 2-3 minutes on each side.
  6. For waffles: Pour into a heated waffle iron and cook for 10 minutes.

NOTES

  • Try adding chopped walnuts to the pancake batter.
  • Top with simple fruit syrup made by heating apple juice to almost boiling and stirring in kudzu root to thicken.

This is possibly one of the easiest, tastiest, quickest recipes I've ever made.

I prefer to eat this at dinner instead of at breakfast, either 1 pancake as a side or 2 pancakes for a full meal. The zucchini taste isn't too strong, so you can serve this to non-zucchini lovers and they'll never know what the secret ingredient is. This recipe is also chock full of turmeric, which has a wide range of health benefits. I love adding turmeric to everything because it's known for its powerful healing and anti-inflammatory properties.

Zucchini Hummus

Zucchini Hummus

INGREDIENTS

  • 2 cups zucchini (chopped)
  • 1/3 cup lemon juice (juice from 1-2 lemons)
  • 1/4-1/3 cup tahini
  • 1/4 cup olive oil
  • 1 clove garlic (peeled, minced)

Spice measurements are approximate...start with the amounts below and add more to taste (I used A LOT of cumin and paprika to kick it up a notch):

  • 1 tsp celtic sea salt
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 1 tsp paprika
  • Dash cayenne pepper

DIRECTIONS

Blend all ingredients (except tahini) in food processor. Add tahini to food processer and blend until smooth and creamy.

SERVING SUGGESTIONS

  • Wrap in collard leaves to make hummus wraps
  • Serve with raw veggies (i.e. carrots, cucumbers, celery, red bell peppers, broccoli)
  • Serve with pita bread, wraps or crackers
